El Chicote is the only one out of a series of restaurants from the 60’s located in down town San Jose that still holds the original owner. The soul of the place is Mr. Roberto Perez Fumero, a turrialban man whose parents were Spaniards. “Back in the days, when I opened this place, there were about 15 important restaurants. Of those only two managed to survive today.
        I started out with a drive inn, back then this place was surrounded with coffee plantations and to visit the place was like a trip to suburbs. The name was suggested by my father, it evokes a bar in Madrid called Pedro Chicote; very famous place back in the 20’s, for there met many European artists with bohemian flair”, states Mr. Roberto, whom at sixty two years and with an extraordinary enthusiasm is aware of all the arrangements that need to be taken care of in the restaurant. At present, Andrea Perez, Mr. Roberto’s daughter, is in charge of the administration and Mr. Roberto still arrives at 10:00 AM to supervise details such as illumination, tables setup and making sure that the flavor of the basic sauces is correct.
        At midday Mr. Roberto and Andrea become wondering hosts whom discreetly attend the visitors.
